Ordering French Toast from a breakfast restaurant you’ve never been to is the ultimate risk/reward game. Almost nobody in the biz makes terrible pancakes, but many make lackluster, mediocre ones. French toast on the other hand, with its signature addition of egg, has the potential to be either a soggy piece of bread with an overcooked egg tacked on the bottom, or a rich, fluffy toast with the egg content perfectly integrated into the dish on all sides.
